Start of Spring (Li-chun, 立春 in Chinese) is the first term of the 24 solar terms (the supplementary system in the Chinese calendar to guide farm work) and arrives when the sun moves to the celestial longitude of 315 degrees.

The Chinese character “立” means “launch; start; establish” and ordinary people in ancient China considered the day as the beginning of the year. An old Chinese saying goes, “a year’s plan starts with spring”.
Temperature begins to rise from the day of Start of Spring and the busy season of spring farming begins in most parts of China.
Flowers come into the blooming season and it is a good time for people to go outing, which is called “Chun-you春游” or “Ta-chun踏春” in Chinese.
Start of Spring also initiates the popularity of Spring Rolls (Chun-juan, 春卷 in Chinese), a kind of food stuffed with shredded vegetables, chicken, sea weeds etc. and wrapped up by a thin pancake.
